Black cod, also known as sablefish, have a high-fat content that lends to their delicate, silky texture and buttery flavor. These fish are a favorite on the Japanese market and amongst seafood connoisseurs. They are packed with Omega-3s and other nutrients and minerals, such as iodine, phosphorus, magnesium, copper, iron, zinc and calcium. Thanks to being held at time and temperatures approved for eating raw, they are sushi grade. Our fishermen have to go deep to harvest this delicate fish - they're usually caught in depths of 1,000 - 9,000ft.
Our black cod is sustainably caught in the Prince William Sound (south central Alaska) by small boat fishermen with longlines or traps and it's strictly regulated by NOAA. The fish is processed and flash frozen immediately after catch to ensure maximum freshness. Flash freezing in vacuum pack preserves the nutrients, flavor, texture and all the other qualities in each portion until you're ready to eat it.
